Gluten-Free, Dairy-Free Banana Bread

This banana bread is just like grandma used to make, minus the gluten and dairy!

Ingredients
  

  • 1 3/4 cup gluten-free 1:1 baking flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup coconut oil refined, melted
  • 3/4 cup organic coconut sugar
  • 3/4 cup organic cane sugar
  • 1 tsp vanilla extract
  • 3/4 cup dark chocolate chips or add-ins of your choice

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a loaf pan with coconut oil and set aside.
  3. Combine your flour, salt, and baking soda, and set aside.
  4. Melt your coconut oil in a large, microwave-safe bowl, then add your sugars and vanilla.
  5. Blend together with a hand mixer on medium speed.
  6. Add your eggs on at a time, continuing to blend.
  7. Blend in your mashed bananas.
  8. Slowly blend in your flour mixture until it is well incorporated.
  9. Stir in your chocolate chips or add-ins with a wooden spoon.
  10. Pour mixture into your greased loaf pan and bake at 350 degrees for approximately 1 hour or until a toothpick comes out clean! Enjoy!
