Gluten-Free Dairy-Free Pumpkin Chocolate Chip Muffin Recipe

Ingredients
  

  • 3/4 cup coconut oil refined, melted
  • 1 cup organic cane sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/2 cup gluten-free baking flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup dark chocolate chips

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Grease 1 muffin tin with coconut oil and set aside.
  3. Combine flour, baking soda, baking powder, salt, and pumpkin pie spice and set aside.
  4. Melt coconut oil in a large bowl, and stir in sugar, vanilla, and 2 eggs.
  5. Add flour mixture and stir well until combined, but don't over mix.
  6. Spoon mixture into muffin tin.
  7. Baked in the oven for 15-17 minutes or until they start to turn a golden brown color.
